How to login to a e-mail server.

I know alot about winsock but how would I login to an e-mail server (e.g. hotmail)?

Well, if it was not hotmail, I proposed to have a look at the POP3 protocol (e.g. search this forum for that term). But as hotmail does not support POP3, you might need to use a sniffer like Ethereal to know how it works.
